Eat Well Recipe: Spinach and Mushroom Stuffed Chicken Breast
Instructions
- Preheat your oven to 375°F.
- In a pan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
- Add sliced mushrooms to the pan and sauté until they release their moisture and turn golden brown, about 5-7 minutes.
- Season with salt, pepper, and dried oregano.
- Butterfly the chicken breasts: Lay the chicken breast flat, then place one hand on top of the breast and slice horizontally through the middle, being careful not to cut all the way through.
- Open each chicken breast "like a book" and season the inside of each chicken breast with a pinch of salt and pepper.
- Lay a handful of fresh spinach leaves evenly on one side of each chicken breast.
- Spoon the sautéed mushroom mixture on top of the spinach.
- Sprinkle shredded mozzarella cheese over the mushrooms.
- Fold the other side of the chicken breast over the stuffing to enclose it.
- Secure the chicken breasts with toothpicks, if necessary.
- Heat a clean skillet over medium-high heat and add a bit more olive oil. Place the stuffed chicken breasts in the skillet and sear them for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through (internal temperature reaches 165°F).
- Remove the toothpicks, if used, before serving.
